3/4 lb Fresh green beans
2 T olive oil
1-1/2 T lemon juice
1 T balsamic vinegar
1 T water
2 tsp minced garlic
1-1/2 tsp Dijon mustard
2 tsp honey
2 cups cooked garbanzo beans , drained
2 cups grape tomatoes , washed
1/4 cup walnuts , rough chopped
Parm
1/2 can sliced black olives
- Blanch green beans and trim into 1-1/2 inch pieces
- Make dressing from the next 7 ingredients.
- Mix green beans , garbanzo beans, tomatoes, and olives together and add the dressing. Chill at least 1.5 hours.
- Add walnuts, parm, just before serving.
Notes:
- Walnuts are already chopped in the bulk department at winco and less expensive.
- You can serve in a lettuce cup or a bowl .
