Mix a marinade of olive oil, crushed garlic, salt and pepper.
4 small or 2 large chicken breasts, thawed.
4 T feta cheese
4 slices of bacon, cooked and drained
Coating: bread crumbs, italian seasoning, parsley
- Cut chicken breasts in half if they are large, then cut each sideways to make a pocket.
- Stuff the pockets with feta and bacon.
- Brush chicken with marinade
- Dip into crumb mixture
- Place in greased baking pan.
- Bake at 350 for 30-35 minutes or until chicken tests done and is no longer pink. I like 180 degrees internal temperature.
