1 pkg penne pasta
1 pound boneless, skinless chicken breasts ,cooked and cut into cubes.
1 cup chicken broth
Salt, pepper
2 cloves garlic, chopped
6 Roma tomatoes, chopped and seeded
1.5 cups fresh spinach
3/4 cup feta cheese, crumbled
- Cook pasta according to directions, drain.
- Sauté garlic in a tsp olive oil. Add broth.
- Simmer broth 2 minutes
- Add chopped tomatoes and spinach and cook until tomatoes arsoft.
- Stir in cooked chicken and pasta and cook until heated through
- Top with feta cheese
