1 large or two small chicken breasts -about a pound,
2 cups frozen corn
2 cups cooked black beans
1 can diced tomatoes
1/2 can diced green chillies
2tsp taco seasoning
1 cup Mexican style cheese shreds
- Cook chicken breasts in the insta pot. Chop or shred.
- Place corn, beans cooked chicken and diced tomatoes, and seasoning in the insta pot and set on slow cook.
- Cook for 2 hours
- Drain any excess liquid. Add cheese
- Place a 3/4 cup of filling into heated shells and roll.
- Serve with chips.
