- Cut pieces of chicken breast into cubes about one inch square. Nothing has to be perfect. Wash hands and any cutting board or knife well. Allow six for adults and four or children.
- Make breading: Several work here. The least expensive is bread crumbs (homemade ) and parm cheese. A more expensive one is buttery cracker crumbs, parmesean cheese, and walnuts. Four parts crackers, two parts parm and 1 part nuts. All cut or shaved fine. A food processer works well.
- Dip chicken parts in melted butter and dredge in crumb mixture. Put on drying rack and let dry for a few minutes. Bake on rack for 20-25 minutes at 400 degrees. Or until internal temp is at 190 and juices run clear and they are no longer pink.
If cooking oven fries too, start fries first, they will take longer to cook.
